Ingredients
  

  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 6 slices of bacon cooked and crumbled
  • 1/4 cup green onions chopped
  • 1/2 cup sour cream optional
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash and scrub the potatoes, then slice them into wedges about 1/4 inch thick.
  • Toss the potato wedges in a bowl with olive oil, garlic powder, paprika, salt, and pepper.
  • Arrange the potatoes in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway through.
  • While baking, cook the bacon until crispy and crumble it.
  • When the fries are golden and crispy, remove from the oven, sprinkle with shredded cheddar cheese, and top with crumbled bacon.
  • Return to the oven for an additional 5-7 minutes, or until cheese is melted and bubbly.
  • Garnish with chopped green onions and parsley. Serve with sour cream, if desired.
