  • 1 teaspoon onion powder

  • 1 teaspoon dried rosemary

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Make the Cowboy Butter Mixture: In a mixing bowl, whisk together the melted butter, minced garlic, smoked paprika, onion powder, thyme, rosemary, cayenne pepper, salt, and pepper to create the flavorful Cowboy Butter.
  • Coat the Potatoes: In a large bowl, add the halved baby potatoes. Pour in half of the Cowboy Butter mixture and toss to coat the potatoes evenly.
  • Prepare the Baking Sheet: Spread the coated potatoes on one side of a parchment-lined baking sheet.
  • Coat the Chicken: In the same mixing bowl, add the chicken thighs and coat them with the remaining Cowboy Butter mixture. Place the chicken thighs on the other side of the baking sheet.
  • Bake the Dish: Bake the chicken and potatoes in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender and golden brown.
