Ingredients
  

  • 2 cups all-purpose flour
  • cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold unsalted butter cubed
  • 2 tbsp lemon zest
  • 2 tbsp poppyseeds
  • cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp fresh lemon juice

Instructions
 

  • Preheat oven to 400°F (200°C). Prepare a baking sheet with parchment paper.
  • Mix dry ingredients (flour, sugar, baking powder, salt). Cut in butter.
  • Stir in lemon zest and poppyseeds. Add wet ingredients and gently combine.
  • Shape dough into an inch-thick circle and cut into 8 wedges.
  • Bake for 18–22 minutes until golden brown. Cool before serving.
