- 2 large sweet potatoes diced
- 1 medium onion chopped
- 1 red or green bell pepper diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 large eggs
- Optional garnishes: parsley avocado slices, hot sauce
Sauté diced sweet potatoes in olive oil with paprika, garlic powder, salt, and pepper for 10–12 minutes.
Add onion and bell pepper, cooking for 5–7 minutes until softened.
Mix the vegetables and sweet potatoes. Create four wells and crack an egg into each.
Cover and cook on low heat for 3–5 minutes. Garnish and serve immediately.
