Ingredients
  

  • 2 large sweet potatoes diced
  • 1 medium onion chopped
  • 1 red or green bell pepper diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 large eggs
  • Optional garnishes: parsley avocado slices, hot sauce

Instructions
 

  • Sauté diced sweet potatoes in olive oil with paprika, garlic powder, salt, and pepper for 10–12 minutes.
  • Add onion and bell pepper, cooking for 5–7 minutes until softened.
  • Mix the vegetables and sweet potatoes. Create four wells and crack an egg into each.
  • Cover and cook on low heat for 3–5 minutes. Garnish and serve immediately.
